Our winter had been horrible here in the Midwest so I decided to make a cupcake that is nice and light, cool, and reminds me of Summer. Which I am DESPERATELY waiting for right now. These Banana Cream Pie cupcakes are so easy to make and they taste even better. You may even have anything you need right in your pantry.
Yellow/White/French Vanilla Cake Mix *You could do Chocolate too if ya like*
Cool Whip Whipped Cream
Foil cupcake liners
First, you will make your box cake mix by adding in the water, oil, eggs, and mash 1 1/2-2 bananas and add to your mix. You will want to use the foil cupcake liners*I learned the hard way lol*. These cupcakes get a little sticky with the banana mixed in.
Bake the cupcakes according to the box and allow them to cool COMPLETELY. If not you will have a giant mess when you frost them.
Now you are ready to make the frosting. It is super easy also. Mix your Jell=0 banana pudding with milk according to the package directions.
Fold in your Cool Whip until you get a light fluffy consistency, but you do not want it to be liquidy(yeah not a word but the best way I can describe it lol) or it will slide off the cupcake. I used a ziplock bag with the corner cut out to frost them but if you are fancier than I, you could use a decorator’s bag.
Now decorate the top if you like. You could crush your Nilla wafers and sprinkle the top if you like also.
FYI: Refrigerate these cupcakes if there are any leftover
